Yesterday we had the Campfields over for ceviche, horchata, mojitos, and watermelon. Then we went to my parents for a dip in the pool and a walk to the beach. So fun!
Horchata is a Mexican rice and cinnamon drink served over ice. It’s so refreshing and delicious! (You may recognize the name from the Vampire Weekend song) Try it the next time you go to a Mexican restaurant, or you could be brave and make it yourself! I used this recipe, with a few commenter led adjustments.
I had never made ceviche either and it was also SO perfect for a hot day! It’s a Peruvian dish that “cooks” raw seafood by letting it sit in citrus juice. Here is the recipe I used. I cut up large shrimp instead of scallops and added diced avocado. You can’t have cilantro and lime juice without avocado! I served it with tostadas and had shredded cheese on the side.
